Bicuixe

Bicuixe (also written bi-cuixe or vicuixe) is a producer-recognized name within the Agave karwinskii sub-variety system. The name's status is genuinely contested. In the Zona Refrescadera around Santiago Matatlán, "bicuixe" is most often heard as a synonym for cuixe, with the prefix bi- carrying no morphological weight. In other producer accounts, particularly out of Tlacolula and the surrounding villages, bicuixe denotes a distinct phenotype: a shorter trunk than ordinary cuixe and a slightly thicker, more compact piña.

Where producers do separate it as its own variety, bicuixe's distillate sits between cuixe and barril on the karwinskii flavor map. It is leaner than barril (less of the honeyed sweetness, less of the rounded body) but fuller than cuixe (more body, more mid-palate weight). Maturation tracks the rest of the cuixe-side of the complex at ten to fifteen years.

Bicuixe is a useful case study in how Oaxacan producer taxonomy works. Two villages can use the same word for two different concepts, and a third village can use a third word for the same plant; the working botanical category (A. karwinskii) is the same in every case, but the sub-variety label is geographically reticulated rather than systematically Linnaean.
